A Taste of Puglia
In this hands-on class, you’ll learn how to make Focaccia Barese, Puglia’s iconic focaccia topped with tomatoes and olive oil, and shape orecchiette, the region’s signature handmade pasta, which we’ll toss with fresh tomatoes and basil in a simple summer sauce.
We’ll also fire up the grill to prepare Bombette Pugliesi, irresistible little pork rolls stuffed with melted cheese, parsley, and garlic that burst with flavor in every bite and prepare Acqua Sale (also known as Cialledda), a refreshing Pugliese bread salad made with friselle, tomatoes, cucumber, red onion, basil, and oregano, the perfect summer side dish.
To finish, we’ll indulge in a sweet specialty from Lecce: Torta Pasticciotto, a flaky pastry tart filled with rich pastry cream and Italian amarena cherries , inspired by the famous pasticciotto pastry, but served in a beautiful tart form.
