A Taste of Puglia
Join me for a culinary journey to Puglia, where we’ll prepare some of the region’s most beloved traditional dishes. We’ll start with fave e cicorie, the classic combination of creamy fava bean purée and bitter greens. Then you’ll learn to shape orecchiette, Puglia’s signature pasta, which we’ll serve with a rich tomato sauce flavored by braciole. We’ll also make pitta Salentina, a savory specialty from the Salento area, and finish with the iconic Leccese dessert, pasticciotto, filled with silky pastry cream.
Fave e cicorie (Wild chicories and dried fava beans puree)
Orecchiette con sugo di braciole (Handmade traditional fresh pasta served with braciole sauce)
Braciole alla pugliese (Stuffed beef rolls braised in tomato sauce)
Pitta Salentina (Potato pie stuffed with onions, tomatoes, anchovies, capers and olives)
Pasticciotto (Short pastry tart filled with pastry cream)
