Hand Rolled pasta from Southern Italy

Learn how to shape traditional pasta from many regions of Southern Italy, made with only durum wheat flour and water (semola rimacinata). Using only your hands you will learn how to shape the dough in various shapes such as cavatelli, orecchiette, busiati, fusilli calabresi, strascinati, lorighittas and more. At the end of class we will sit down and enjoy a dinner of three different pasta shapes with their own sauce and a salad. The focus of this class is for you to learn and practice all the pasta shapes and master one of your choice which you will take home.
