In a “Taste of Sicily”, we travel to Western Sicily where you will learn how to make some of my favorite dishes from this area. We will make a traditional pasta dish found in Palermo. We will follow with pork rolls accompanied by caponata and fennel and orange salad. To complete our meal, we will make cannoli shells filled with homemade ricotta cream and topped with my homemade candied orange peel.
Caponata (Sweet and sour eggplant stew)
Pasta c'anciova (Pasta with tomato paste sauce, anchovies, pine nuts and raisins topped with toasted breadcrumbs)
Spiedini di Maiale (Grilled Pork rolls skewered with onion and bay leaves)
Insalata di finocchi e arance (Fennel and blood orange salad)
