In a “Taste of Sicily”, we travel to Western Sicily where you will learn how to make some of my favorite dishes from this area. We will make a caponata with eggplant,  anelletti (tiny rings of pasta) only found in Palermo baked with ragu and eggplant.  We will follow with vegetable rolls accompanied by a traditional salad found in Palermo during the summer months. To complete our meal, we will make cannolo ice cream made with the same ingredients of a cannolo.


Caponata (Sweet and sour eggplant stew)

Timballo di Anelleti al forno con melenzane ("Ring Shaped" pasta baked with meat sauce, peas and eggplant)

Involtini dell’Orto (Grilled eggplant, red peppers and zucchini stuffed and baked with breadcrumbs, pine nuts and raisins)

Insalata alla Palermitana (Potatoes, tomatoes, green beans and roasted onions)

Gelato al Cannolo (Cannolo ice cream)
