Winter Comfort Foods of Calabria
Friday, January 13, 2012 6:30 pm
In this class we will make some of my favorite winter foods as they are prepared in my home town of Verbicaro. Most of these dishes use powdered dried sweet peppers for which Calabria is noted.
We will begin with sun-dried zucchini sautéed with oil, garlic and red pepper powder. Next, we will make fresh pasta cooked with chickpeas. Then we will bake chicken with vegetables and a cauliflower salad. Our meal will end with a light and feathery walnut cake served with a sauce flavored with nocino, a walnut liqueur I brought back from Calabria.
The Menu
Zucchine Seccati al Sole (Sun-dried zucchini sautéed with oil and garlic)
Lagani e ceci (Homemade pasta with chickpeas)
Pollo alla Calabrese (Baked chicken with potatoes, tomatoes, and hot pepper)
Insalata di Cavolfiore (Cauliflower salad)
Torta di Noci con crema di Nocino (Flourless walnut cake with nocino liqueur sauce)
