    We will fix a traditional pasta dish from
    Puglia , orecchiette, or  “little ears”,
    tossed with broccoli rape.  We will then
    roast a whole fish under a crust of salt,
    which is  popular all over Southern Italy.
    The salt crust leaves the fish moist and
    all we add is a drizzle of olive oil, lemon
    juice and fresh herbs. We will finish our
    meal by baking some wonderful cookies
    so popular all over Southern Italy and
    beyond -- amaretti and almond cookies.
