A Taste of Sicily II


    In this class I will take
    you to Palermo and
    prepare some of my
    favorite dishes.  We
    will even make cannoli
    shells from scratch
    and use homemade
    ricotta for the filling.

Timballo di riso alla Palermitana
(Risotto layered with eggplant, mozzarella and tomato sauce)

Involtini di Pesce Spada
(Swordfish rolls stuffed with bread crumbs, raisins, pine nuts,
saffron, and baked with orange slices and bay leaves)

Caponata
(Sweet and sour eggplant stew)

Insalata d'Arance Sanguine
(Salad of blood orange, fennel and olive)

Cannoli SIciliani
(Cannoli made with homemade ricotta)
