In this class I will take you to Sicily by making one of Palermo's famous pasta dishes: pasta con sarde. This is the time of the year when wild fennel grows around Sicily (and here in California too!) and fresh sardines are plentiful. It is a special dish from Palermo that you must try. We will make succulent chicken rolls stuffed with pancetta and caciocavallo (cheese from Sicily) and grill them skewered with onions and orange slices. The chicken rolls will be served with fresh roasted artichokes on the side. We will finish with another dish typical of Sicily: profiteroles filled with homemade chocolate gelato and drizzled with chocolate sauce.
