Harvest from My Calabrian Garden

    In this class we will tour my
    Calabrian garden and prepare a
    meal with the vegetables that we
    harvest.  At this time of the year
    my garden will be full of ripe
    tomatoes, Italian sweet peppers,
    eggplants, hot peperoncini, and, I
    hope, lots of figs!  Following the
    tour we will meet in the kitchen at
    Paulding and Company with our
    harvest and prepare a meal from
    the fruits and vegetables we have
    gathered.

    We will start with a homemade
    pasta tossed in a sauce made
    with ripe San Marzano tomatoes
    roasted in the oven.  We will also
    prepare a tomato salad with sweet
    red onions from the garden.  
    Then we will fry whole sweet
    Italian peppers with anchovies
    inside that are out of this world.  
    We will fix a classic eggplant dish
    from Calabria and finish it all off
    with a beautiful cake layered
    with fresh figs and pastry cream.

(Homemade eggless pasta tossed with roasted
tomatoes)

Insalata di Pomodori e Cipolle Calabrese
(Tomato and Calabrian red onion salad)

Peperoni Fritti
(Fried sweet Italian peppers stuffed with anchovies)

Melanzane, Pomodori e Peperoni
(Eggplant, pepper and tomato stew)

Trionfo di Fichi
(Cake layered with fresh figs and pastry cream)
