The Queen of Vegetables:
Eggplant From Appetizer to Dessert


    In this class we will take
    eggplant -- the queen of
    vegetables in Southern Italy --
    and make dishes from all the
    regions of the south.  We will
    begin our menu with eggplant
    meatballs found in Sicily and
    Calabria. We will then
    progress to a baked pasta
    dish with eggplant, as well as
    stuffed eggplant and a salad
    from my town of Verbicaro.  
    We will conclude on the Amalfi
    coast with a unique dessert
    from that area that combines
    eggplant and chocolate!


Polpette di Melanzane
(Eggplant meatballs)

Pasta al Forno Con Melanzane
(Baked pasta layered with eggplant, tomato sauce
and fresh mozzarella)

Melanzane Ripiene
(Eggplant stuffed with ground pork, bread crumbs,
pecorino cheese and baked with a simple tomato
sauce)

Insalata di Melanzane
(Strips of cooked eggplants tossed with olive oil,
garlic, peperoncino, mint and vinegar)

Melanzane al Cioccolato
(Eggplants layered and filled with ricotta and
chocolate)
