In this class we will take eggplant -- the queen of vegetables in Southern Italy -- and make dishes from all the regions of the south. We will begin our menu with eggplant meatballs found in Sicily and Calabria. We will then progress to a baked pasta dish with eggplant, as well as stuffed eggplant and a salad from my town of Verbicaro. We will conclude on the Amalfi coast with a unique dessert from that area that combines eggplant and chocolate!
