In “Eggplants from Appetizer to Dessert” we
    will take eggplant and make dishes from all
    over Southern Italy where eggplant reins
    as the queen of vegetables!  We will begin
    our menu with eggplant “meatballs” found
    in Calabria and Sicily.  We will then
    progress to baked eggplant rolls filled with
    pasta, followed by stuffed eggplant, and an
    eggplant salad from my town of Verbicaro.  
    We will conclude on the Amalfi coast with a
    unique dessert from the area, combining
    eggplant and chocolate.

(Eggplant rolls filled with spaghetti, caciocavallo cheese and topped
with tomato sauce and
ricotta affumicata (smoked ricotta))


Melanzane Ripiene
(Eggplant stuffed with ground pork, bread crumbs, pecorino cheese
and baked with a simple tomato sauce)

Insalata di Melanzane
(Strips of cooked eggplants tossed with olive oil, garlic, peperoncino,
mint and vinegar)

Melanzane al Cioccolato
(Eggplants layered and filled with ricotta and chocolate)
